Mexican dinner party - what would you want to eat?

Just that really!

I want to host a Mexican themed dinner party for a couple friends since we can't go out to a restaurant for my birthday.

If you were attending (and liked Mexican food 😂) what would you want to eat?

Nachos. Always nachos.
Fir pudding anything with Dulce de leche. Google Dulce de leche cheesecake omg
Main course? Not chilli - too everyday. Fish tacos

Anything accept fajitas, too old El Paso! I would go with beef barbacoa, chimichangas or quesadillas, maybe some empanadas!

Mexican is so going on my meal planner this week!

I travelled around Mexico a few years ago and did a cooking class. Tacos etc is all Tex mex, not actual Mexican food. I LOVE Tex mex and cook it a lot but if you want proper authentic food then they eat a lot of corn and beans. At the cooking course we made:
Starter: sopas and black bean soup - so good!
Main: stuffed courgette - I think it was with rice and veggies. Struggling to remember now.
Pudding: apple tart thing.

But mostly the menus all had mole, rice, corn and beans in some variety.

I have a mole rampaging through my garden if anyone wants it for their Mexican. We have been having Mexican lasagne made with chilli and tortilla. Very nice. Perhaps put the flippin mole in the next one 🤣

This is one of my favourite ever recipes - www.gimmesomeoven.com/cheesy-chicken-enchilada-soup-recipe/

I quite often do rice bowls with some sort of meat dish, guac, salsa, sour cream corn, corn (charred on the cob then cut off), cheese, lettuce and anything else you want really. That might work for your tapas idea and if you add some nachos, mole etc people can keep going back for more.
