Mexican dinner party - what would you want to eat?

Just that really!

I want to host a Mexican themed dinner party for a couple friends since we can't go out to a restaurant for my birthday.

If you were attending (and liked Mexican food 😂) what would you want to eat?

There would have to be guacamole, salsa and soured cream. Either tacos or fajitas, maybe some nachos. Beef Chilli, fajita chicken, or quesadillas with black beans and cheese. I do love enchiladas, burritos, etc. But tacos and fajitas seem the sociable option? And nachos are social too of course

Chili Colorado - I've made it loads of times and it never disappoints. Also Mexican rice (made with tomato stock), guacamole, sour cream, grated cheese, and tortillas. No idea how authentic all that is (apart from the Chilli) but it's what I'd want. Oh, and also Beef Barbacoa if you were up for making two meat dishes. And Rick Stein's Mexican rice pudding with honeycomb for afters.

I'm hungry now :)

Oh and some kind of rice, although I don't eat rice. Most people would expect rice.

My "Mexican" is mostly Eldo Paso crosses with Las Iguanas, so I am no expert on what's traditional.

I would probably do fajitas as it's nice and communal.

Chicken or prawns with onions and peppers cooked in plenty of fajita seasoning. Homemade guacamole and salsa, soured cream, lots of grated Monterey Jack cheese. More tortillas than you think anyone will eat. Nachos.

I might also do a good veggie chilli on the side with some rice but we have friends that like to eat!

I really like the idea of doing some traditional recipes I haven't tried before so I was thinking maybe a ceviche in lettuce cups to start, Barbacoa tacos for main and a chilli chocolate fondue type thing with churros for dessert 😄

I really like the sound of a proper Mole too though, and fish tacos, and rice pudding, and tres leches cake....so many options!

One thing I will definitely be doing is making my own salsas, guacamole and mojitos!

My Mexican dinner party list tends to be:
Bean chilli, barbacoa beef, homemade salsa/pico de gallo and guacamole, tortillas (big so people can make burritos or small for soft shell tacos), lime and coriander rice and/or red rice, lots of cheese and sour cream and tortilla chips. Maybe cheese quesadillas too.

Mojitos, tequila, margaritas (a giant mango margarita filled dispenser usually goes down well!) and corona.

Fish tacos sound amazing too. So do the desserts!

There's just so many things I want to make and try it's hard to narrow it down! I almost like the idea of having a tapas style selection of dishes with a bunch of tacos/tortillas and salsas so people could take what they like the look of and mix it up to suit.

Fish tacos usually seem to be served in soft wraps with crunchy slaw and they sound soooo good!

As does a giant jar of mango margaritas!

Rice, vegetarian chilli, beef chilli, salads, tacos and wraps. Homemade sides (salsa and guacamole), sour cream, grated smoked cheddar.

I love nachos, so that would be a must for me. Also, I actually like spicy food, so the chilli should actually be spicy!

Chimichangas, quesadilla or enchiladas are my favorite. I really don't like fish based Mexican though. Definitely guacamole, sour cream and mojitos though

My dh makes a lovely sweet potato enchilada in like a spicy tomato sauce with Guacamole, tortilla chips or nachos etc.

My husband is Mexican. If I were to do a three course dinner party I'd make sopa de tortilla/sopa Azteca to start, barbacoa de res with corn tortillas, onion, chopped green chillies, coriander and a homemade salsa for main and sweet tamales (pineapple?) for the dessert although it's not really a dessert as such. Tres leches would be a good choice, too. I'm not a huge fan of Mexican puds, but the savoury stuff is so good.

If it was a lunchtime meal I'd make cochinita pibil or taco fish for the main. Ceviche sounds like a fab starter too as it's so light, if your guests will enjoy fresh seafood. Buen provecho!
