Omelette fillings...

Just eaten a rather tasty ham and mushroom omelette and it occurred to me that I have NEVER had any other fillings in my omelettes.

I have always gone to ham and mushroom and I cannot imagine an omelette being any better.

So, good people of Mumsnet, spice up my life, hit me with your favourite fillings and I may give them a bash next time ( I probably won't)

Ok, this may be a whole other level that sounds far too hard, but really, it's not. Masala omelette. My favourite is in fact a crab masala omelette. Most recipes have the spices in the omelette and then a spice, crab, and tomato filling, but the best is spices fried, then stirred into the eggs and gently added chopped coriander and crab meat... and then cook the whole thing. A friend mentioned it the other day and I've not stopped thinking about it since. In fact, I'm going shopping today, and will get some crab and quiet the voices Grin

Ps, the reason I don't add tomatoes at all is that I've never managed to make it without horrid wet omelette which I'm slightly phobic about.. grilled toms or tom salad on the side! realfood.tesco.com/recipes/indian-masala-omelette.html

Any combination of:

red onion, bacon, diced peppers, cheeses (different ones) mushrooms.

Sometimes I mix grated cheeses in with the egg.

Smoked salmon with a touch of cream cheese.

If you can get them try duck eggs.

Left over potatoes cubed and fried to get a crunch before adding the eggs.
