Posting here because there'll likely be more traffic than on the other boards.

I'm planning on trying to eat more/mostly vegetarian meals for January (don't think i could healthily manage the transition from meat eating to veganuary!), and would appreciate some ideas so that I'm not surviving on mac and cheese all month (though on second thoughts...)

I actually really like meat but ethically struggle to feel comfortable with eating it so thought I'd at least give it a go. I'm not a big fan of spicy food (as in fajitas or chilli, I do like a mild curry) and don't enjoy tofu. I've got an 18 month old so need to be able to whip something up for me fairly easily after he goes to bed (he eats at 5 which is way too early for me). I don't have any allergies.

I know google is my friend but I think sometimes the best recipes are less prescriptive and more tried and tested.

Look at Jack Monroe website, my family love the bean goulash recipe.

Slimming World Jambalaya and Lentil Shepherd's pie.

A roast with a meat substitute - not necessarily quick though.

Omelette or poached egg on toast for a super quick meal.

I'm the same OP, I do like meat but struggle with it ethically. Am 95% vegetarian and try to eat vegan as much as possible.

I can really recommend the Bosh! books, Jamie Oliver's Veg and Mob Veggie. I've cooked so many things from them all!

Also, I have swapped things like nuggets and sausages with meat free versions. My kids really like the Richmond meat free sausages and Quorn nuggets.

I do a lot of one pot recipes which I keep in the fridge to reheat when needed, perfect for kids lunches and quick healthy dinners.

BBC good food is a good place to find recipes, and I really like the new Jamie Oliver veggie book, and Hugh Fearnley-Whittingstall’s Veg everyday book. Otherwise I’ll post a few recipes I cook often below.

Ooh, @theneverendinglaundry, I didn't realise Richmond did meat free sausages! Xmas Shock Which Supermarket do you buy them from, if you don't mind me asking? Richmond sausages always look so juicy and yummy (It feels strange writing that having been veggie for decades! Xmas Grin ).

This is our meal plan for the next week or so:

Cheese enchiladas
Potato and cabbage curry
Thai green curry
Veg stir fry
Quorn spag bol
Homemade vegetable soup with crusty bread
Nasi goreng (Indonesian fried rice)

We often have vegetable pastas / lasagnes. Lots of curries (I love spicy food but you don't have to make them hot) and Mexican food (ditto).

Vegan here with 4 children. Our meal plan from today is -
Pizza with salad and vegan coleslaw.
Shepherds pie with veg ( mushroom and green lentil base)
Frys chicken style burgers and chips.
Smokey sausage and bean stew with cauliflower cheese.
Pesto pasta with garlic mushrooms, sprouting broccolli and garlic bread.

I just made mushroom, tofu, cashew and coconut rice with hoisin sauce and it was heavenly.

I followed the YouTube video on how to make tofu taste like chicken and it really worked.

I will never go to the Chinese again.

Quorn nuggets, sweet potato wedges with grated cheese, mayo and a bit of chilli sauce is the food of the gods.

you can access all the recipes for the hello fresh recipe box scheme free without subscribing, and can filter for veggie recipes. most are fairly simple to cook and delicious.

I made this curry recently (it's vegan although I'm not) & made my own tikka paste rather than using a shop bought. It was delicious - I added some roasted cauliflower (roasted with garlic & coriander seeds), sweet potato but the courgette was in too long so cook that for a few mins near the end. Also used slightly more coconut milk as it was pretty spicy

falafel and humous in pita with salad
pasta with roast veg (peppers, courgettes, aubergines and red onion) and cream cheese or goat's cheese
pasta pomodoro
vegetable savoury crumble (cubes of veg in passata or veg stock topped with a crumble blend of ground nuts, seeds, oats, brown breadcrumbs, butter and grated cheese)
veg omlette with sweet potato fries

I would encourage you to give tofu another go. Tofoo is a good brand.
go to recipes in my house are
stir fried rice noodles with veg and peanut sauce.
Bean chilli with cornbread or rice
Polenta with mushroom stroganoff
Jacket potatoes and beans
Veg soup (with either potatoes or beans to make it more hearty)
Veg lasagne (quick bechamel made out of silken tofu, seasoning and nutritional yeast)
Iceland's no bull burgers with homemade vegan slaw and sweet potato wedges
Pea risotto
Chickpea and pasta soup
Big salad with steamed veg, pulses, nuts and seeds. Maybe with avocado or tahini dressing.
And, for very lazy days, nice bread, hummus, olives, cut up salad veg, pistachios and a large glass of wine.

Going from omni to vegan for 31 days carries no health risks. Despite all the veganuary people complaining that they feel ill and "must have a deficiency" after approx 4 hours Grin

My dinner meal plan for next week, 2 adults and a 5yo. Breakfasts are always cereal / toast. Lunch usually soup and Alpro yoghurt.

Mon: Chickpea tart (leftover from this evening), mash and peas

Tues: Buddha bowl (ignore the poncey name - it's just greens and grains with toppings) of greens, brown rice, smoked tofu and tahini dressing

Wed: spaghetti with mushrooms and peas

Thurs: guests, so I'm doing a Portobello mushroom burger made with [[https://www.bosh.tv/recipes/the-vegan-big-mac vegan Big Mac sauce] and home made chips

Fri: pizza - Tesco have started doing a plant based one which I think is really nice

Sat: Bean and Rice casserole

Sun: nut roast & trimmings

1 pepper and half a block of halloumi per person. Dice halloumi, half some cherry tomatoes and black olives. Mix halloumi, tomatoes and olives with some lemon juice and a couple of chopped garlic cloves. Halve and deseed peppers. Fill with halloumi mix. Put in baking dish, in oven at 180 degrees for 45 to 50 minutes. I lime mine served on ciabatta or foccacia to mop up the juices.

Back to school timetable after that and time is much tighter so favourites are

  • noodles and stir fry (I add tofu, but peanuts would also work)
  • pasta with Violife cream cheese and frozen peas
  • baked potato with hummus and roast veg
  • Quorn fishless fingers with rice or chips and green veg
  • mushroom bourguignon (I make enough for at least 2 days!)
  • spaghetti with lentil bolognaise
  • mild Thai green curry
  • sausage and mash
  • scrambled tofu and baked beans
  • baked cauliflower, rice and tahini sauce
