To ask for your vegetarian or vegan meal ideas?

Posting here because there'll likely be more traffic than on the other boards.

I'm planning on trying to eat more/mostly vegetarian meals for January (don't think i could healthily manage the transition from meat eating to veganuary!), and would appreciate some ideas so that I'm not surviving on mac and cheese all month (though on second thoughts...)

I actually really like meat but ethically struggle to feel comfortable with eating it so thought I'd at least give it a go. I'm not a big fan of spicy food (as in fajitas or chilli, I do like a mild curry) and don't enjoy tofu. I've got an 18 month old so need to be able to whip something up for me fairly easily after he goes to bed (he eats at 5 which is way too early for me). I don't have any allergies.

I know google is my friend but I think sometimes the best recipes are less prescriptive and more tried and tested.

You could sign up to veganuary anyway and you’ll get ideas for free?

Some meals we eat in our vegan household:

Breakfast

  • toast with spread (flora, vitalite or naturli)
  • jus rol pain au chocolats
  • porridge with almond milk and fruit
  • shreddies with oat milk
  • fruit smoothie with spinach/ smoothie bowl
  • vegan cheese and vegan bacon toasties

Lunch

  • peanut butter sandwiches
  • Portions of dinner options

Dinner

  • vegan pizza
  • baked potato with baked beans
  • bean chilli With couscous
  • chickpea curry with rice
  • pasta with Lloyd’s grossman sauce and lentils/ veg/ vegan “meats”
  • vegan Richmond sausages with garlic mash and peas
  • veggie stir fry with rice noodles
  • vegan lasagne
  • tacos using refried beans
  • vegetable fajitas
  • Thai curry with rice
  • veggie burgers in roll with sweet potato chips and salad
  • soups- tinned vegetable or homemade

Desserts:

  • vegan magnum/ cornetto/ Ben and Jerry’s
  • asda chocolate or raspberry torte
  • mr Kipling treacle tart
  • coop jam or custard doughnuts
  • morrisons vegan cupcakes

Snacks:

  • fruit
  • nuts
  • nomo bars or vegan galaxy
  • Oreos
  • Duncan’s of deeside shortbread
  • bourbons
  • fruit shortcake biscuits
  • crisps (many vegan kinds)
  • chocolate covered roast chickpeas

So not the healthiest start to the year with a veggie pizza and garlic bread from tesco yesterday. Tonight DH is making a sweet potato and spinach thai curry for dinner which smells delicious! Squirrelling away all your suggestions for the rest of the month.
