So what can I Cook with minced beef for a bit of variety

I use this one, it's very versatile. I don't bother with the spinach and not always potatoes. You can add or take away bits or alter amounts to taste. As long as you have the ginger, cumin seeds and coriander seeds you'll have the most important flavours. Substitute chopped tomatoes for tomato puree if you so it in the slow cooker.

My next thread will be more vegi meals as I'm really trying to mixup the menu
But this half a ton of mince DH bought yesterday needs eating and I swear I can't face another week where I can pretty much tell what day it is according to what I'm eating Grin

Stuffed peppers - red peppers brushed with olive oil and crushed garlic, stuffed with cooked seasoned mince. Top with a lid of roast aubergine slice.

Stuffed vine leaves/bean leaves.

It's got some interesting flavours and is great with the jacket potatoes in winter.

Korean Beef
500g lean minced beef
1/4 cup brown sugar
1/4 cup soy sauce
1 Tbsp sesame oil
1 clove garlic, minced

Pinch chili flakes
1 tsp minced ginger
1 Tbsp tomato purée
Sliced green onion, for garnish

Add beef to slow cooker and break it up into small chunks with a spoon.
In a small bowl, stir together the brown sugar, soy sauce, sesame oil, garlic powder, chili flakes, ginger and tomato paste. Stir into the slow cooker and really coat the beef. Cover and cook on LOW all day. Stir well to break up large chunks. Serve beef and sauce over rice and garnish with green onion

Don’t know if anyone has suggested this but a bolognese gnocchi bake (with melted mozzarella on top) is a nice variation on the old spag bol.
