Could I survive eating only these for an indefinite time?

Pondering about this following a recent spell of hotel room living, plus flirting with minimalism
Pulses (hummus)
Green leafy vegetable
Whole grain bread
Marmite
Lemon juice
Tomatoes
Carrots
Olives

Would this be sustainable long term or is it missing a vital nutrient ...

Survive, yes I expect so. Be healthy? I doubt it. It's good for you to eat a very wide variety of foods.

Also I don't really see why living in a hotel room or being a minimalist would necessitate such a restrictive diet tbh.

Just googled and there is 8g protein in hommus per 100g. A sedentary female is advised to eat 46g protein per day. Are you going to 3 or 4 tubs of hummus per day? Won't that get boring? Or is there another substantial source of protein that I missed in your list?

Sounds like my perfect food. Add some nut butter, dates and banana (for sandwiches/breakfast) and bliss.

Marmite contains B vitamins in B12 doesn't it?
Bread contains protein but not all 20 amino acids - iirc you need to pair it with something like nut butter.

If you're not dairy free the combination in the OP seems to be crying out for feta or mozzarella and maybe some Greek yogurt.

Simplifying my food means to me: one type of oil, one type of vinegar, only three kinds of pasta (a shape, orzo and spaghetti), two kinds of rice (basmati and risotto). I suspect we are on slightly different pages when it comes to this OP, but I would be bored out of my mind restricting my food like that.

Unless you're literally eating the marmite by the scoop, you'll need more iron than that, especially if you're a menstruating woman. Green leafy veg are not as ferrous as we might hope.

You can simplify your life without permanently restricting your food intake to eight items.

I’m afraid it does sound like an eating disorder OP. People with eating disorders are always looking for excuses to restrict their food intake.

If you’re living in a hotel would room service not be more fun?
If not I would add a few more things to your list - bread , peanut butter, crisps ( for the hummus) kit kats, yogurts, noodles, chips , pancakes , bottle gin, tonic water and maybe a bag of apples

You'd probably survive OP, but why would you put yourself through that? It's rather joyless and not sustainable mentally IMHO.
