Anyone have an idea of what I can have?

I'm so fed up of baked potatoes and I really don't want to cook 😭

It's bloody hard adjusting to this way of eating

According to my coeliac colleague there is a good selection of meals suitable from Cooks. Maybe stock up some and use in case of emergencies or not on the mood for cooking.

My dh makes a lovely gf pizza just using gram flour and water.
Make a thinnish batter and pour into greased non stick frying pan.add your toppings
We are going to have to find a good vegetarian cheese

It does get easier @TheyCallMeMellowYellow There are lots of "normal" foods that are gf and you soon get to know your way around food shopping again. It's my dh that's gf and if we have takeaway we have Pizza Hut or use the chip shop that does gf. If you ask at your local Indian and Chinese takeaways they may be able to give you a list of the dishes you can safely eat. Gf pizzas from the supermarket are usually ok though. Definitely no need to live in jacket potatoes. If you list some of the things you would normally cook perhaps we can suggest gf replacements that we've found to be good. As a back up the Kirsty's ready meals are nice too.

For lasagne - I never pre cook the sheets, I make the sauce sloppy and prepare it the day before, leaving it overnight in the fridge - tastes 'normal'
