Quick easy tasty dinner suggestions for two people who can't be arsed

Got family coming for the weekend so will be eating takeaways and out for the next few days.

Run out of ideas for something reasonably healthy, quick and easy for tea (or not quick but doesn't take any prep).

Not pasta or pizza...

My go-to lazy dinner is:

Frozen onion, frozen peppers and peas all in a pan with some chicken, fajita seasoning (or any of your choice!) and microwave spicy rice Grin

Lazy as fuck but delicious and easy to make different with different flavours etc!

Any of the recipes from the roasting tin by running iyer.
Basic idea is that everything gets thrown in a tray together. Is ace.
Do you like fish?
Throw broccoli and salmon on an oven tray roast for 20 mins. Dress with sweet chilli sauce and serve with micro rice if that’s your bag.
Also love cherry tomatoes whole and red onion slices in a tray. Cod fillet on top and then a spoon of olive tapenade on the fish. Roast for 15 mins.

Another fave is can of chickpeas and can of tomatoes on tray with chopped onion and a bit of chopped chorizo. Throw chicken thighs on top and toast for 40 mins at 160fan/180 then turn up to 180/200 for another 50 mins or until chicken golden brown

Homemade 'nandos'

Butterfly chicken breast, pour over nandos sauce and grill. serve in a pitta with salad and oven chips.

My ultimate lazy dinner consists of picnic type things with a dip. Toasted pitta bread, hummus or guacamole, slices of cucumbers, cherry tomatoes, carrot sticks... Sometimes falafels, or some of those deli things from M&S. It's reasonably healthy with all the veg and perfect for warmer weather especially.

Fajitas
Mushroom chicken - dry fry some chopped mixed mushrooms, then add chopped red onion and diced chicken with a tiny bit of oil. When soft, add some cream, mustard and a bit of lemon juice, cook down until it tastes ok with salt and pepper
Prawn stir fry
Cooked breakfast for dinner Grin

Jacket potatoes- Tuna Mayo, cheese and beans?
Toast- Egg on toast, cheese on toast?
Chicken Kiev’s, hunters chicken..
Again picnic style food with sausage rolls, pork pies, salad, cheese a nice bread.

Fry mince, add taco powder, squeeze of tomato purée. Serve in wraps with cheese and salad.

Omelettes are quick, easy and healthy.

Microwave baked potatoes.

Chicken breast with pesto and mozzarella.

Burgers are easy, I bung mine in the oven.

Baked salmon.. put two salmon fillets on a sheet of foil on a baking tray, top with a lemon slice, season with salt and pepper. Wrap the foil round to make a parcel then bake for 20 minutes at gas 6 / 200c / 180 fan. Serve with boiled baby potatoes and your choice of veg.

My lazy dinner:

Sweet potato wedges with yoghurt and cucumber raita, cheese and blackbean quesadillas, some kind of tomato type salsa, and maybe apple slices with peanut butter for dessert.

Brown some mushrooms and red onions.
Ready rolled sheet of puff. Score boarder, prick centre.
fill with mushrooms, onions and then crumble over blue cheese.
Egg wash edge of tart and put in oven for 20 mins. Serve with bag of salad.

Ultimate lazy dinner: cheese & tomato toast in the oven. Add some onion, garlic and/or parsely if you want to be extra fancy.

Ready cooked chicken shredded, Chinese pancakes, cucumber and spring onion shredded and ready made plum sauce. My children and husband love this dinner a quick an easy take on crispy duck and pancakes.

I often do a ploughman's when I can't be arsed to cook. Crusty bread, hunk of cheese, some pate, ham, silverskin pickled onions, mustard mayo and some salad leaves.

I also do a super easy delicious pasta dish. While pasta is cooking, fry off some pancetta or bacon lardons. Add some cream and crumble in a stock cube. Mix together. Done in 10 minutes.

Salmon, rice & asparagus.
Salmon 90 secs-2 mins in microwave (on a plate with spoon of water)
Micro rice 90 secs
Asparagus on a plate, in the microwave 1 min
For super lazy days couscous ready made instead of rice
For low carb/healthier option tenderstem broc & asparagus stir fried with soy sauce.
Yum!

Omelette - smoked salmon and creme fraiche filling

Chicken thighs brushed with a coating made from hot buffalo wing spice and olive oil

Waitrose frozen risotto mix with prawns and smoked haddock.

Our new go to that is piss easy, healthy, can be done from fresh or frozen, and packs the required punch is Shakshuka. Varying recipies - mine is fry onion in Olive oil, garlic. Add tablespoon smoked paprika. Tin of toms or 6 big tomatoes and a squeeze of puree. Cook down. Add spinach, fresh or frozen. Can have like this or a)cook an egg or two on top b) add feta cheese c) add chorizo with the onion. We serve with a pita we shove in the toaster. Whole lot 15-20 mins. DH loves it in all its forms and is usually a sausage and mash chap!
