Quick easy tasty dinner suggestions for two people who can't be arsed

Got family coming for the weekend so will be eating takeaways and out for the next few days.

Run out of ideas for something reasonably healthy, quick and easy for tea (or not quick but doesn't take any prep).

Not pasta or pizza...

As others have said, savoury traybakes are the answer here. A quick google will turn up loads of delicious and super easy recipes. This is really the only way I cook now (dh does the fancy weekend meals). 😉

Chop up a selection of veg - either Mediterranean (peppers, courgettes, aubergine, red onion) or root (carrot, parsnip, celeriac, new potatoes), throw in a roasting tin. Add either sausages or chicken thighs, and roast . Or add chickpeas half way through, or crumble a pack of feta over for the last 10 minutes.

Another yes to Shakshuka! The eggs 'poach' in the sauce and it's delicious.

Fried rice - start with any bits of bacon/ham/roast chicken we have, add to stir fried onion wedges and any other veg that I can mentally classify as stir-fry appropriate. Then tip in a sachet of microwave rice (Tilda is good) and soy sauce and any other splashes of lime/chili/ginger etc. Soooo easy and scrumptious for a meal on the sofa watching tv.

Ihad the cheaty-iest tastiest dinner today. Sliced onions and red pepper in olive oil.....sauteed filleted chicken thighs..... add a pack of taco seasoning and a little bit of water to make it all gloopy.... cook, then serve with microwaved brown rice, sourcream, salsa and guacamole.

SO good.

Thai coconut soup
lemon grass and ginger, saute up with couple teaspoons of red curry paste
Add chicken stock, sugar and fish sauce simmer for 15 mins
Throw in a load sliced mushrooms and couple cans coconut milk and simmer till mushrooms are soft, usually 5 to to mins.
Toss in some raw shrimp and juice of a lime and simmer till shrimp cooked, 3 or 4 mins usually
Add chopped cilantro and serve
I usually serve it over a bit rice.

Pasta puttanesca is very quick and delicious. For two: two tablespoons of pitted black olives in brine, rinsed and roughly chopped, one tablespoon capers, chopped if large, a couple of anchovy fillets, chopped. Fry gently together in olive oil for a few minutes. Add half a tin of chopped tomatoes and some chopped flatleaf parsley (optional). Simmer a few minutes, serve with spaghetti or linguine.

Oh, I just remembered the first ingredients are meant to be fried in a mixture of olive oil and butter.
