What would you do in this situation?

I am starting to worry there isn't a way out of it and would really appreciate an outside prospective/opinion on things.

I started a new job at the beginning of May, All was generally ok to begin with although there wasn't really any onboarding or training, very much thrown in at the deep end although not for the first time, My line manager was very blase/unclear about pretty much everything and so I tried my best to muddle through,

I was on a three-month probation period, throughout this period of time I didn't have any objectives or goals set for example, There was no 4,8,12-week review/sign off, We just had weekly general catch ups around what was happening that week,

To cut a long story short, A few weeks before my probation was due to end my line manager mentioned it was coming up, and that he was happy with my performance overall and that I'd passed, so I thought that was that...

A few weeks later he pulled me to one side and out of the blue told me my probation was now being extended by three months, I was obviously a bit confused/taken aback by this as it was a completely different conversation to a few weeks before,

Fast forward a few weeks later and the company announce they are restructuring and making redundancies with both my team members and line manager being impacted and they all left within a week, I was told my role wasn't at risk, however I am still in limbo not really knowing what's going on, and if I'm honest, I am really struggling/sinking suddenly trying to pick up three people's workload and inboxes when I was only just about surviving before,

It's a small-ish business however is part of a much bigger group but there is only one person in HR and they don't really seem to do things by the book, so trying to speak to her or get some clarity doesn't feel like it will get me anywhere either.

I am applying and interviewing for other roles where I can, but I am so worried and stressed by the current situation that I'm not really eating, sleeping, grinding my teeth and constantly dripping in sweat, I am the breadwinner and don't have savings/family to fall back on so feeling in despair about how to survive this.

Just carry on as you are now and do everything you can to find a different job. Sounds like just another scum capitalist organisation that will fire people for nothing at the drop of a hat to maximise profits, ensuring you're getting one wage for doing 3 people's jobs and don't ive a fuck about your health otherwise. Was probably the goal from the start tbh. Sorry you're in this situation. Look after yourself

All you can do is keep going as you’re going BUT take the heat off yourself because you can’t do three people’s jobs. It sounds easy and impossible at the same time but do what you can do and then say ‘ sorry but I can’t do that/ don’t have time’

The HR person might not know what's really going on, and even if she does, she wouldn't be allowed to tell you.

When your line manager said that you'd passed probation and then shortly afterwards told you it had been extended, it is likely that he was told by his manager that your probation would be extended. At that stage he probably had no idea why. I don't think either your manager or the HR person would have known about the restructure in advance.

Whatever, it does sound very uncertain, so perhaps you need to start looking for another job asap. I think they got rid of the permanent staff and are using you as a temp, basically.

If it is a Ltd Company, you can go onto the Companies House website and search for the company. There will be records to view, and some might be helpful for you.
