Just a bit of advice, as I don't want to appear desperate(even though I am!! job seeking for the last 4 months)

2 ideal jobs applied for - through email, no closing date, but no acknowledgement that they had received my email, it's been 2 weeks - would you send a polite email asking, and how would you word it?

Yes I’d email or call to check

I wouldn’t. If they were keen they would be in contact. They’re probably still going through applications

Dear hiring manager/ I wanted to follow up on my application for [role] to check you'd received this safely. I'm very interested in this role as it's a great fit with my (main experience/main career aspiration) and I would welcome the opportunity to tell you more. Thanks for your time/Kind regards ...

Personally I wouldn't. I have tried on the odd occasion to follow up, they are usually ignored. i think if they were interested they'd tell you, it does come across as a bit pushy in the UK.
