Just that, really. How many jobs to I include all of them or the last 10 years?

It depends on what you're applying for. Your CV should be one double sided page max. The most recent, and also the most relevent should be highlighted. Your current role and one or two before that are usually the only thing a recruiter needs to care about. If relevant experience happened a few jobs ago then still included it though.

Are any of your really old ones relevant?

Depends really. A standard cv not more than 2 sides -so current, previous plus any relevant- they do not need we to know you had a paper round at 12 haha. Some sectors do require full employment history eg social care but they should make that clear on the job advert

What's the job sector?
Some sectors like teaching and NHS need a full employment history with all breaks explained

Yeah, Civil Service wants your whole employment history (with exact dates)!
