Wondering if someone can help:

We've just got a new card machine at work, and it now has the option to add the gratuity option when presenting to customers (our old card machine was from the Stone Age and we are just a small relatively new buissness/cafe)

My questions are:

The tips taken on the card machine, will show up on the end of day summary receipt. Do we document each days tip takings somewhere? Adding it up until payday at the end of the month?

We pay wages monthly, these tips will be paid alongside their monthly pay on their payslip right? So when we email payroll, would we tell them the total amount of tips that need paying out that month??

Do we get to divide the tips up fairly.
We have some staff who work 1-2 days a week, some 3, some 5. So we'd like it to be proportionate.
Would we instruct payroll for example : employee A to get 10% / employee B to get 25%? How does that work?? We have approx 9 staff members.

For clarity, We email payroll through how many hours each staff member has worked each month and then they produce the payslips, send them back and we pay the staff directly into their bank accounts and email out their payslips to them.

This is just new to us, any help would be greatly appreciated. I will be contacting our payroll office also. But just sat pondering it tonight and wondered is anyone knew xxx
