How many jobs to list on a CV

I have been in my current job for 5 years and I was with my previous employer for 9 years and had a few roles there where I gradually moved up. I consider these the only roles relevant to any new positions I might apply for. After leaving school I had 4 or 5 low skilled jobs in various sectors which look a bit crap on the CV.

What is the general consensus for a CV? Should I list all of the jobs with a summary of what I did for each? Should I list the employers and job title alone? Or something else?

I bunch all my early/not that relevant ones together and put something like:

1999 - 2001

Various customer-facing roles in retail and hospitality.

So there's no gap on my CV but it's not taking up space with irrelevant info.
