How do people deal with this day to day? How do you keep going and stay cheerful in a high pressures and understaffed job?

just that really, I’m at the point I really should ring in sick but I feel defeated if I do.

the issues have been raised multiple times at work and they keep promising more staff, but nothing yet (it’s been months)

An unhealthy relationship with alcohol and regularly insulting my colleagues helps me cope however I imagine that's not quite what you meant.

Unfortunately I have no genuine advice, hopefully someone who does will come along.

Nothing can really solve this except possibly a new job. But you could try
...

Always having a break planned and something to look forward to. Buy extra annual leave days if you have that option.

Surround yourself with sympathetic colleagues and friends.

Work to rule if you can, don't go 'above and beyond' anymore do the minimum to get through.

I have decided I need to say no much more, and work within the job role and no more. It’s time for a new challenge I think, I’ll get job hunting which also makes me feel a bit defeated

an unhealthy relationship with gin does sound appealing but I’m not sure I’m quite ready for that 😆
