Anyone ever just take an impromptu sick day these days? Just to have a bit of a rest? Get some head space?

Yes. I think wanting to is often a sign that you need to. Unless you are generally a bit flaky and workshy.

I've never ever taken a fake day off sick, I'd be too worried about being discovered! To be honest, I work alone in an office so even if I am sick I often go in because I know I won't see anyone. Maybe I should try one...

I don't feel the need to these days as I wfh and find the day so much less stressful. I can reset so much easier even if everything is going wrong and havent suffered from stress since wfh (in context, my work is full-on and deadline-driven with occasional 70 hour weeks and huge amounts of flights/travel. when office-based about 1/3 in my role suffered with stress and were signed off at some point because of it).

But occasionally now I have a lighter day pop up in my calendar, fewer calls and deadlines further away and I unplug my laptop from the monitor and do work with modern family or something in the background. It's a kinda treat. I still work my a**e off but no need for a duvet day.
