A colleague of mine is paid a higher salary than me.

I have to cover their duties during their lunch break and also whenever they’re off sick.

Should I legally be paid the same rate as them when I am covering their duties during their lunch/sickness?

No, colleagues cover for one another, you should see it as an opportunity to extend your knowledge. If they are paid more and you are able to cover for them you will find it easier to make that step up when the time comes.
