How can barbers tell the difference?

How can barbers tell the difference between men and women, if biology doesn't matter but performing gender stereotypes does?

I wonder what % really do care? I'd guess it would really be a minority. Maybe some who are not supposed to touch women for religious reasons, and maybe a few others?
