There's a prefer not to say though?? Aren't these things optional just so they know who uses the facilties? Like do they need more female facilities, toilets etc?

But maybe they want to know gender rather than biological sex?

I'd have done the same as you OP.

Plus I'd write "gender is a social construct". And I don't fill in ethnic origin questions.

And what purpose is the data being collated for? Are they collecting info to ensure they're meeting the needs of all those who like blue and tractors and dinosaurs and fixing cars while having short hair?

Male/female are not genders they're your sex.

Sex is the protected characteristic. I've started to correct forms to. If they want to know about gender reassignment they should ask that in a separate question.

Oh this drives me mad. I was filling out a form for DS’s new school the other day and it asked for gender, options male or female or other. I crossed out gender and wrote sex. FFS, it’s so tiresome.

I was wistfully thinking of a huge successful campaign to get the real meanings of sex and gender re-established, but I think it's too late. Arrggg where is this all going to end?
