Need to lose weight

I'd really appreciate some gentle advice and encouragement please.

I probably need to lose around 3 stone. I have piled on weight due to various health issues. I'm.now really suffering for it. I'm breathless and have suspected gallstones.

I was ill for a while and my diet was very bad. I've been working on my diet trying to incorporate vegetables and good nutrition, it's a work in progress but I'm getting there.

I think my main problem now is portion control. I'm eating very large portions and still snacking late at night.

Meals include:

Wholemeal toast and butter
Vegetables (aubergine, tomato, onion, spinach, carrots, courgette, peppers) brown rice, tofu, olive oil, rice noodles, paneer, halloumi, low fat cheddar, Dahl and paratha, omelette, scrambled eggs, chickpeas, potatoes, mixed beans, baked beans, pasta, wholemeal wraps, banana, mango, cherries, yogurt.

It's not great but much better than it was which was heated up Quorn in the microwave and pitta.

I don't eat sweet things like chocolate or biscuits and don't drink alcohol. Beverages include tea and soya milk, squash/cordial, sparkling water.

I currently can't exercise due to various health conditions, not even anything gentle.

Any suggestions please?

We all know you need a calorie deficit to lose weight.
You need to know how many calories you need and how many you are eating.
There are calculators for the BMR
And you need to weigh what's going in.

OK being honest I don't weigh fruit or veg. But I weigh carbs.

Some people will fast which has other benefits others will do low carbs.

The biggest thing to start with has to be portions. I'm not very far down the road but nearly fell over the other week at calories in a granola yogurt. I managed to wolf down a double portion of tuna - whoops - only realised that inputing into my phone.
