Hi, can anyone give me easy and filling lunch ideas please? Something that I can make up the night before?

In summer I ---

Buy salad bowls and throw a handful in my dish.
Add cherry tomatoes and spring onions or whatever, half an avocado.
Add maybe coleslaw or hummus.
Then add tuna crunch. Tuna is filling and healthy.

In winter I ---

Buy soup and either rice or lentil packets.
Half of each in my bowl.
One packet of each lasts two days.

Good luck!

@something2say thank you, although I probably should have said that I had salad nearly every day for lunch in may and june, and have now sickened myself of them 🤦‍♀️. They did work for loosing weight though, unfortunately I've put it all back on.

I love doing up a load of veg - either stir fried or roasted - then adding some pesto and a handful of pasta or couscous (measure both if calorie counting).

A big pot tastes lovely cold and you can obviously use different sauces/veg as per your own tastes.

I love salad but I'm getting bored of it, plus I don't think it actually fills me up. And cost oer calorie, it's extortionate!! I've just bought some really nice sturdy 2 compartment meal prep containers from Amazon, and my plan for autumn is meal prep and leftovers! Roast dinners, chicken and rice, curry and half the container to be veg.

I love soup but I just cannot make a nice soup except lentil and bacon, but that does freeze well.

I’ve been having warburton thins with sliced chicken and low,fat cottage cheese and some rocket. I actually like it.

Roasted veg with chicken or tuna
Lentils/tarka dhal with chicken or tuna
Green salads like green beans, peas, watercress, nuts, salmon/prawns/tofu

I dont put any carbs (or very few) in with it so lots of protein component

Mix it up from time to time adding in houmous and avocado. I use lots of nuts, hazlehuts, almonds, peanuts, walnuts, cashews, a whole mixture.

Cheese and grated carrot is a surprisingly nice mixture

I do a combination of all of the above so I dont get bored like you say OP!

Im not keen on soups to take to work, too sloppy and messy, too hot in the microwave and then I need to carry it to my desk - a high risk activity!!

I have a bento box with 5 compartments and I fill it with

1 protein - often hard boiled eggs, cheese or meat
1 carb - bread, pasta, cous cous, rice but
1 fruit - chopped melon or satsuma segments
1 veg - usually a salad of some type but might be veg sticks
1 'other' - if I'm doing veg sticks this will be hummus

I also have lots of small pots I can put salt, vinegar, salad dressing etc in.

Tinned salmon or mackerel.
Cottage cheese and whatever you like veg wise with it.
Boiled eggs and avocado
Tuna and cous cous with med veg.
Tofu.

A mixture of all these things!

Thanks for the ideas everyone.
Off to check out the containers with compartments lol
