Help with Vegan/veggie recipes please

I am currently on a 16:8 diet calorie counting which has worked well so far, however I eat too much meat as a staple protein and with the rising food costs Id like to cut costs by going vegan/ veggie.

Im lacking recipes/ skills/ time/ money, also work f/t, and Im a lone parent,

Could anyone recommend low calorie vegan/ veggie meals that are also cheap please?

I would be so grateful! All my research so far brings up cheap carby recipes which are too many calories!

I made a really simple spinach and ricotta bake for 303 calories for 6 portions. It freezes well so I can just grab a portion out whenever I don’t feel like cooking. The recipe is for gluten free pasta, so not sure how regular pasta compares calorie wise, but for 200 g of pasta between 6 portions, it’s not going to be too carb/calorie heavy. The lentils make it extra filling but even if you need slightly larger portions, so divide it by 5 instead of 6, it’s still only 364

I tweaked the recipe slightly adding 60g of red split lentils (soak in boiling water before you do anything) to the Passata step and also tweaking the cheese. I just used 100g of cheddar in total, mixed 50g in with the ricotta and sprinkled 50g on top along with 10g of nutritional yeast which has a cheesy flavour. Oh and I didn’t have any garlic oil so left that out.

For spag Bol I generally pulse a pepper, mushrooms & carrots in the food processor, sauté an onion, add the pulsed veg, add a small carton of Passata (500g I think it is) and a can of chopped tomatoes, add 75g of dried red split lentils along with stock cube and some dried herbs and leave it to cook out. I tend to make a veggie lasagne to portion and freeze and then also have some portions of bol to freeze too that I can either have on pasta or top a small jacket potato with. For the simple Bol it’s something ridiculous like 80 calories so I have plenty enough cals left to have the pasta/potato. You might need to play around with the amounts you make/portion sizes.
