New year meal plan!

If anyone, like myself and dh, are planning a lifestyle change involving healthy food and exercise in the new year , what is your meal plan for the next week?

We both lost around 7st each in 2019. Maintained it until I fell pregnant in Aug 2020 and since dd was born in May this year i've been totally off track! Have at least 3st to lose again. I feel sluggish and tired all the time.

I feel very motivated today and we're starting tomorrow. Finishing last bits of xmas food tonight as a "last supper."

We both eat meat but not much of it, and meals need to include what the kids will eat so I am looking for ideas!

I'm going shopping on Sunday to start Monday and just typed up our meal plan into notes:

Dinners:

  • Tuna steaks in garlic and soy with greens
  • Sticky lemon chicken with stirfry and noodles
  • Red lentil dahl
  • Keema matar
  • Thai prawn curry
  • Sprout and Roquefort risotto
  • Smoked salmon pasta

I usually cook enough for two days to save cooking each day. Also its just me and DD13 and most recipes say "serves 4" and its just easier to follow them to the letter than attempt to divide a teaspoon of something into 4 :)

Well done on the 7 stone loss!!

Lunches
Roasted tomatoes with feta and chickpeas
Roasted veg buddha bowl
Smoked salmon and egg wrap

Dinners
Chicken tagliatelle
Chicken fajitas (in lettuce wrap rather than wheat wrap)
Cod and veg
Fish pie with cauliflower mash
Roast chicken dinner - WW recipe

Great idea @blackcoffeenosleep Grin I could do with some menu ideas too!

I'm thinking of re-starting Hello Fresh or similar for DP as he eats (or wants to eat) completely different things to the rest of us... I know it's a bit pricey but TBH if it would save me time and/ or money then I may give it a go, as he did at least eat their recipes and not moan as much as usual

I just lack the time to prep and cook as well TBH and as he doesn't help, it'd be nice to have more time to concentrate on things for me and the DC!

We had a hello fresh dinner tonight. It was really good-roasted cauliflower, lentil and harissa pie. There was plenty for lunch tomorrow too.

Tomorrow will be their veggie laksa
Monday is always pasta before the gym. Probably roasted veg with pesto and a bit of feta
Tuesday hello fresh sweet potato dal
Weds kung pao tofu and sprouts (much nicer than it sounds!)
Thursday needs to be easy so jackets and burnt aubergine chilli from the freezer
Friday will be a curry-chickpea, quinoa and spinach stew from vegan richa. Again, much nicer than it sounds!

We only get them on special occasions. I figured post Christmas it would be a good start to healthier eating!
