Low GI diet ideas needed please!

Bonus points if you are gluten free!

I suffer with insulin resistant PCOS and after losing weight on meal replacements and keto (and feeling shit and not sleeping during that time) I've piled it all back on over lockdowns so want to have a new approach, a lifestyle change.

I have the GI diet book, but I'm interested in what people actually eat as it seems almost too carb heavy to me?

Start with oats and chia seeds with cinnamon, soaked in almond milk overnight.
Black coffee only
Eggs (omelette) and salad at 11 ish for lunch
Lots of water
Handful of almonds (no more than 10) or Greek yoghurt and berries for afternoon snack
Lean meat and vegetables (loads) for dinner. Quinoa if hungry.

No sugar or alcohol or rice or bread.

Loadsa nuts, loadsa pulses, loadsa eggs. (GF) oatcakes with peanut butter, hummus and veggies, and nuts for snacks. Veg instead of pasta. Omelette for a quick meal (fresh or prepackaged Spanish). Bump up the fat and protein for satiety.
