Healthy lunches

Hi all, I lost a load doing low carb high protein in the summer. Because it was easy to have loads of salads with roasted veg, quorn, halloumi etc etc but I really need to carry on shifting. When I did fast 800 I ate a million omelettes and now have totally put myself off omelettes.

I'm working from home every day so can prepare nice lunches but since it's winter all I want to eat is jacket spuds, leftover pasta. What do I eat that's low carb and filling for lunch? I HATE soup. And am vegetarian, help!

I'm low carb and find lunches hard too!
Alternatives to my salad are things like
Bacon/egg/avocado
Keto pancakes (make and freeze a big batch)
Cheese and keto crackers
Greek yoghurt with berries/ keto granola
Last nights dinner left overs
Kippers
101 different omelets Grin

Luckily I like soup so that’s my go up but when I haven’t got any, I go for a bit of a ploughman’s type thing - cooked meat, boiled (or pickled) egg, cheese, tomatoes, cucumber. To be fair, it’s probably more like a toddler’s snack than a ploughman’s Blush

Or last night’s leftovers!

Doh! Just reread and seen you’re vegetarian, sorry! So ignore me as the ham/chicken/prawns are quite a sizeable portion of my toddlerploughman’s.

Feta scrambled eggs sound amaaazing! I've been desperate to get my hands on those Richmond sausages and can't find them anywhere! Are they in the fresh or frozen section?

The fresh section but with the veggie stuff. They’re great! They also do extremely filling veggie burgers.
