Vegetable

1 red onion, chopped finely
225g (8 oz) carrots, diced
3 celery sticks, sliced thinly
175g (6 oz) swede
1.2 litres (2 pints) vegetable or chicken stock
1 tablespoon tomato puree
400g can of chopped tomatoes
salt and freshly ground pepper
2 tablespoons chopped fresh mixed herbs, such as chives,parsley, basil and oregano to serve

  1. place onion, carrots, celery, swede, stock, tomato puree and chopped tomatoes in a large saucepan, and bring to the boil.

  2. reduce heat and simmer gently for 25 mins, until vegetable are very tender. Season to taste and stir in the fresh herbs before serving

(I personally blend mine after cooking, but this is optional!)

celery and Leek

350g (12 oz) celery, sliced
350g (12 oz) leeks, sliced
2 garlic cloves, crushed
2 tablespoons of light soy sauce
850ml (1 1/2 pints) vegetable stock
1 teaspoon of caraway seeds
salt and freshly ground pepper

  1. place celery, leeks and garlic in a large saucepan and stir in soy sauce. Pouyr over vegetable stock, sprinkle in caraway seeds and bring to the boil. Reduce heat, season to taste and simmer for 20 mins
  2. remove about a third of the soup and set aside. blend remainder
  3. Return blended soup and unblended soup to saucepan. heat through and serve
