Inspiration for a low calorie veggie dinner please!!

I've been calorie counting / mfp since beginning of Jan and need some inspiration for new low cal dinners. I have around 500 cals left today (aim is 1200) and wondering if you lovely MNers have any suggestions please

Chickpea curry with cauliflower rice?
Veggie chilli
Sweet potato wedges
Greek salad
Garlic mushrooms with puy lentils and rocket is a fav
Tonnes of soups

Tonight I will be having spinach and ricotta tortellini, baked with a pile of vegetables (onion, celery, carrot, courgette, red pepper) and a jar of tomato sauce, topped with a bit of Philadelphia light (beat in a little water for spooning consistency) and a sprinkling of Parmesan. A packet of Sainsbury's tortellini will do three generous meals in this fashion, at maybe 400 kcal a go.

Also this week I have eaten Puy lentils (200g dried) braised with red onion, celery, garlic, and roasted beetroot (500g) - five meals at about 300kcal each, and goes well with a sprinkling of feta, or some veggie sausages, or even just a bit of nice bread.

I'm doing the same. Can I ask how much you have lost if that's not too cheeky. I am having butternut squash noodles (m & s) with tomato and green olive sauce

Not too cheeky Parrish I have lost slightly over 5lb in Jan. However I have had several 'social' weekends due to a weekend away and several birthdays including my own so I am quite chuffed with that. Also my starting BMI was 24.something so I wasn't technically overweight and therefore wasn't expecting the weight to drop off easily.

Thanks for the suggestions everyone. Cauliflower rice is not something I've tried yet but keep hearing about it so will definitely give it a go. I also bought a bunch of beetroots yesterday so the lentil dish sounds yum :)
