Re-introducing carbs - when and how?

I'm currently eating around 10-20g carbs a day. My ketosis levels are going crazy and tbh I'm not feeling too great although the weight is falling off. I'm thinking of sticking it out until next weekend (then I would have stuck to 10-20g carbs for exactly 1 week) and then slowly start to introduce a few more carbs.

How should I do this? replace my low carb breakfast with cereal? add a few potatoes to my dinner? Eat some fruit?

I want to do it in a sensible way as I'd be mortified if all the weight piled back on again.

How long have you been low carbing for? How much weight have you lost?

Personally I wouldn't add breakfast cereal or potatoes...

I'd add some pulses (low GI carbs), perhaps some porridge oats to breakfast (again low GI) perhaps with some natural yoghurt (low GI carbs). Some low GI fruit (berries, apples) probably ok.
