Mini desserts

After having 3 dates we are trying again end of July but our dessert maker will be away and we are getting silly quotes back. I can make good cheesecake, chocolate ganache cake etc but obviously don’t want to be making 130 on the day! Can anyone please suggest any desserts that would freeze well that we can just take out the freezer on the day and decorate with fresh fruit etc.

If you are making your own, then don't do mini desserts. It is much, much easier to manage large ones that just need cutting up by your designated helpers. TBH, I'd just serve cake instead of dessert and buy in nice chcocolates with the dessert budget to have with coffee after

Not a mini dessert, but this could be a good option, especially for a July wedding when it could be warm. I made it at the weekend - it was easy, delicious, light, and very easy to slice too. I think you could also easily amend the recipe to your tastes - remove alcohol, switch to raspberries... It's not just one that you can make in advance and freeze, it's the whole point of this dessert! The sauce was nice, but would even be good without, or you could buy in a pre-made caramel sauce to make it super easy.

Ocado does a really good brand of frozen macaroons (can’t remember brand sorry), which look lovely and colourful, just would save you some time!
