Has anyone done this? Can you talk me through how to even get started looking into this?

I did.
Just went with husband to be, no guests.
Did no planning beforehand as not necessary.
Arrived in Las Vegas, went to an easy to find office to get a marriage licence, no appointment necessary, just join the queue.
Use passports as ID.
Outside licence office there will be people with flyers promoting their chapel or venue.
Pick one.
Go along with licence.
Get married. They will provide a couple of witnesses.
Done with the minimal fuss and expense.

I was a bridesmaid at a Vegas wedding. They went with Virgin who help you organise it all. (The were even able to rearrange the wedding after the couple called it off the day before and it was cancelled......then rebooked it the following day!!)
