Best sausages?

Hi, DS is 12 months old and loves yorkshire pud/ mash with baked beans so I thought I could add some sausage when he has those. I'm wondering, however, what is the best sausage to go for - meat percentage and low salt wise?

I found the best sausages were from a local butcher who made them himself - reassured me how much extra crap they put in! Other than that, the more expensive, generally, the better they are (unfortunately).
