Made AK's popeye pasta recipe tonight and it went down so well with everyone. No, hang on, that's an understatement... it was DELICIOUS! And SO easy to make. I know there are many anti-AK on MN but 10month old DD, DH & I could all eat it....so cheap, so yummy, so easy.... go on, try it. Great way of getting iron into you.
P.S. Did I mention it tastes wonderful?

I used ordinary pasta. I doubled this recipe and it wasn't really enough for 3 of us, so I'd triple it next time....Enjoy!!

Recipe Ingredients
200g fresh spinach, washed or 100g frozen spinach
30g Annabel Karmel's Mini Pasta Shells
15g butter
2 tbsp milk
2 tbsp cream cheese
4 tbsp parmesan cheese, grated

Recipe Method:
Cook the pasta according to the packet instructions.

Carefully wash the spinach and cook with just the water clinging to its leaves in a saucepan or microwave over a low heat until tender.

Gently press out the excess water. If using frozen spinach, cook according to the packet instructions.

Meanwhile, melt the butter in a small frying pan and sauté the cooked spinach.

Combine the spinach with the milk and cheeses and chop finely in a food processor.

Mix with the cooked pasta.

Information:
MAKES 2 PORTIONS
Suitable for freezing
Suitable from 8 months

Oh, and I didn't bother with the food processor.

Suitable from 8 months?! Why on earth would you need to wait till 8 months to make this?
