Ideas for chicken rissoles?

What could I mix with chicken to make some little rissoles as finger food for an 8 month old? Thank you!

OOh, anything I guess. I tend to make my rissoles with chopped onion and peppers, or whatever I've got in the fridge really. I reckon some onion and red or yellow pepper would be good. Perhaps some dried apricot for added sweetness?

And it might need some egg and a bit of flour to bind if chicken a bit dry?
