Cooking chicken without unsalted chicken stock - any advice?

I bought some chicken to introduce protein to DS who is a PFB and nearly 7 months.
All the books say you need to cook with stock. I haven't got any and haven't got anything to make it with.
Can I just do it in some veg cooking water?

i used to just cook in water, maybe put in a bay leaf to add a bit of flavour.
using water is fine i believe.

Stock just adds flavour but, if you think about it, chicken by itself is quite tasty enough for a wee one who's never tasted it before. It's only us who miss the salt!

I swa some stock cubes in the baby section in Boots which are salt free.

when you cook the chicken save the stock and add it to the puree? dont worry water is just fine. flavour is somethng that really wont bother litte one yet!

just to say one of the recipes I tried you just cooked the chicken along with the veg (cauli, carrot, potato) in water to make a sort of casserole. it goes down well anyway!

M&S has a gorgeous chicken stock that does not have salt in it. Very expensive though at £1.99 and just enough for me to cook DS a beef casserole (5 portions!). He loved it though!!!! I tasted it and it was delicious...

I made a chicken casserole yesterday for the first time and it was very easy and went down well. Throw chicken, veg (I used a parsnip, sweet potato and carrot) in to pot and cover with boiling water. Simmer for 20 mins and then blend using some of the cooking water to get to right consistency. Easy peasy

Chicken steamed is lovely and soft for little ones- doesn't require any stock either.

I used Kallo low salt stock cubes tbh- the amount of salt in the is negligible, though of course they are not marketed at babies- are organic too.
