Ratatouille???

Trying to think of things that I can make for dinner that my 9 mo old can have. I was wanting to make ratatouille tomorrow but if I remember correctly do you not have to score the aubergines and rub salt into them for a while before washing it away. Do you really have to do this? Or is ok to do this as you are washing them after or does some of the salt remain?
Anyone any experience with aubergines for babies?

The salt is to remove bitter juices, IIRC, but I usually just chop up veg - roast in oven first, then add to tomatoes later. Never had a problem with bitterness.

My babies used to have this with couscous - they loved it. BTW no need to faff about with the aubergine!

these days aubergines have had the bitterness bred out of them, haven't had one that needed salting since about 1995

Thanks all. Had vague recollection someone telling me you didn't need to salt them anymore. Think I've been looking at a really old delia book
