Questions about freezing fish and meat dishes

I have a couple of questions about freezing fish and meat dishes.

I've read that you need to cool the food quickly before putting it in the freezer, but what is the best way of cooling it?

Also, I've got some mince and chicken in the freezer.If I defrost it and then make something like lasagne or bolognese sauce can I refreeze these dishes?

I just leave it out to cool and then put it in the freezer. If the mince/chicken were raw before they were frozen then you can refreeze them after they have been cooked. You can freeze them once when raw and once when cooked.

thanks seona1973 That is what I thought I would do I just wanted to see what other people did. I'm glad it is ok to use the meat I have in the freezer as I bought it to use for ds.
