My DS will be six months on Monday and I am in the process of making up a batch of mashed potato and lentils. Can I make it with some cows milk or is that not safe for him yet?

Yes you can but use full fat cows milk.

cows milk fine for cooking and on cereal etc at this age, but not as a main drink until around 12 months, and yes, use full fat.

Ah I only have skimmed so maybe I will just leave the milk out this time.

Why can't they have skimmed milk by the way - is it bad for them?

Full fat is recommended until 2 as they need the higher content. It won't do harm to use skimmed as a one off though.

It was in the leaflet I got from the HV so I figured it was a good idea!
