Annabel Karmel Cookbook - freezing question

Probably a stupid question but i want to make these recipes from the Karmel cookbook for my 1 year old DS and freeze them for during the next couple of weeks- but do i freeze them before or after i cook them?

Annabels tasty beefburgers
Carrot and courgette croquettes
Grandmas gefilte fish
Cocktail meatballs with tomato sauce
Chicken and apple balls

I would cook them first then just heat through (not sure about teh fish tho, depends on the recipe)

I'd cook them then freeze too, so there is just thawing / warming to do.

I'd definitely freeze them first. They only take 5 mins or so to cook once you have defrosted them and they'll taste miles fresher and much more palatable if you do it like this. Otherwise it'll be like eating reheated leftovers!

  • Re the beefburgers and the chicken and apple balls - would i make up the recipe then wrap items individually in clingfilm and freeze them without cooking them and then take out freezer when i want them, defrost in fridge and then cook?

Also re the carrot and courgette croquettes - how should i change the recipe so they work? More or less of something?

I think I cooked the chicken balls and then froze them, reheating when needed. I didn't do the beefburgers but I might be tempted to freeze those raw.

I find the croquettes too liquidy when using her measurements. TBH I never used her measurements as I didn't find they worked. 2 portions actually = 2 ice cubes iirc.
