How do you freeze fish?

I know how to freeze fish per se, but I've bought a salmon steak and obviously it's huge for ds but I'd like to start introducing some fish in to his diet. Do I cook it first, portion it out and freeze, or cut it in to tiny pieces and then freeze it raw and then cook each piece separately when I want to give him some?

I'd freeze it raw in pieces and cook it fresh each time. That way you can vary the recipe!

Or you could have a big cooking session- cook the fish, make various sauces and then freeze the results- I did this with some white fish, made a white sauce, then added different vegs/cheese etc to different portions. Depends whether you like to cook every day or bulk prepare stuff.
