7 month old not interested

My baby is now just over 7 months and we started weaning a week before he turned 6 months. He had all the signs of readiness and seemed to really enjoy the excitement of food to begin with.
I make my own home made purée and he has had some finger foods like banana and melty puffs. I'm very anxious about BLW even though I know plenty do it and it's good to do.
We've had a few major gagging episodes where he's vomited a lot on textured purée, he seems to be very sensitive. Not sure if it's because he had a tongue tie and has a high palate.
Anyway... he's not that interested in food at all. He won't open his mouth to the spoon so I load the spoon and let him get on with it. He has a little bit (sometimes) but most gets splattered, smeared, thrown everywhere!! It's such a mess to clean up and it results in a bath each time. That's all good for him as it's learning about food but he doesn't seem to be wanting to actually eat it?
He's exclusively breast fed and never been a massive milk drinker either. He feeds 4 hourly in the day and a few times in the night. He would happily go without if we are out and about and I have to give him a straw cup so he gets some milk when we are out. Unbelievably he's on 98th centile weight wise. He was 21lbs at 5 months.
Where do I go from here? Just keep offering ? I worry he's never going to "learn" to eat.
The things he will eat is yoghurt , smooth fruit purée and ice lollies.
Please someone help a very anxious mama.
I see all these beautiful plates of food on Instagram with babies eating it. I just feel everything I make the majority goes in the bin.

As disheartening as it is when it seems they aren’t eating, you just have to keep going. He will get there but it’s all so new to babies. Mine isn’t great either. She’s 8 months and I feel only in the last week or so she seems to be enjoying and wanting food more. We do mostly BLW as she isn’t impressed when I try to spoon feed most the time. Have you tried giving him things like some lightly done toast with a little bit of butter or cream cheese ? sweet potato wedges also go down an absolute treat and Banana is a good one too for mine. She has recently also been loving pineapple rings cut in half. Tbh mostly she just sucks the food but is definitely eating more. Try not to worry about him choking so long as you are supervising him and making sure the food is soft etc the chances of him choking is low. (Although I know it’s so hard not to worry!) The gagging is perfectly normal. And don’t compare your baby to instagram (they will only ever upload what looks good which probably happens only 5% of the time!). Just keep going and he will get there.
