Vegetable breakfast

I'm looking for something healthy and tasty for my 16 month old for breakfast, ideally with vegetables.. Currently he has weetabix and berries and some melon or orange on the side but he's resisting much food with his childminder and so she's offering lots of fruit, and I don't want to overdo it! I don't mind if it involves a bit of cooking, but ideally not a lot of prep unless its in advance as mornings are a bit rushed. TIA!

I normally give one weetabix and a scrambled egg on nursery mornings because it's quick. You could make frittata in advance and freeze and just take out a piece the night before maybe?

Eggy bread, beans on toast, scrambled eggs with tomato, savoury waffles/pancakes, omelette? Make the mix and keep it in the fridge ready to make in the morning.

Spinach and mushroom quesadilla
Avocado toast
Black bean dip on toast (whizz up 1 can of black beans, rinsed, 1 crushed clove of garlic, splash of olive oil, squeeze of lemon and 2 tbsp yoghurt)
Omelette/frittata with spinach/tomato/mushroom/pepper
Vegetable muffins
Baked egg cups with roasted veg - I do a big tray of roasted veg a couple of times a week with broccoli, cauliflower, pumpkin, butternut, courgette, carrot etc and can throw these in to baked egg cups or use a pumpkin/cheese blend in a cheese toastie

Lovely thanks everyone.. I'll definitely be doing some of these. @Pacidove when you say baked egg cups is that just egg in a cupcake mould type thing?

Yes, I just whisk up some eggs and add to a greased muffin tin with veggies/cheese/herbs and bake until set, around 18mins in a 180C oven

Let me know how they go! I usually use three eggs which makes 4 egg muffins when the fillings have been added. They keep for 2 days in the fridge in a tupperware and can be frozen too
