ok -here is a fav of c's
split pea burgers / sausages.
soak yellow or grren split peas for about 1 hr. drain and boil until soft but not total pulp. mix in beaten egg or natural yoghurt. add breadcrumbs ( i have also used up sachets of baby rice as a binding)
let it chill for about an hour.
roll into sausages/ pat into burger shapes and roll in breadcrumbs.
i then put greaseproof paper between them and freeze. i grill them as and when needed.
you can add finely chopped cooked vegs - onions, peppers, courgette etc as well.
the peas can be substituted with mashed chickpeas or any kind of tinned beans.

Each Peach Pear Plum puree - goes with a book! 1 peach, 1 pear, 2 plums. Chop all fruit small, add enough water to generously cover and stew till soft. Drain off excess water and mash,blend up/sieve as required. Seems to freeze well.

Carrot & Ricotta bake

2 Carrots, diced.
1 small onion diced
half a tub of ricotta

Fry onions, add diced carrots and season (I use onion granules and garlic). Stir in ricotta and oven bake for half an hour.

I sometimes stir in a bit of plain yoghurt before serving.

Veg bake.

small onion, diced
2 potatoes, diced
Diced leek (or a.n.other vegetable of your choice)
White sauce
Handful breadcrumbs

Fry of onion then diced veg. Add white sauce then top withbreadcrumbs +/- some grated cheese and oven bake for half an hour.

Chicken nuggets (haven't given these to ds yet but dd likes them!).

2 chicken breasts, diced.
1 onion diced
1 carrot diced
2 handfuls brown rice
1 handful green lentils

Fry off the onion then add chicken & carrot (or apple works well too). Add water then rice and lentils and season.

Cook for 30-40 minutes then cool and blend. Stir in some mayonnaise to make it sticky then shape into patties and roll in breadcrumbs. Freeze on a flat surface then you can put them in a bag once they are hard. Can cook from frozen.

Sweet potato patties

2-3 sweet potatoes, boiled and mashed.
1 can haricot beans (drained).
1-2 handfuls breadcrumbs
Garlic granules.

Mixed the beans into the mashed potato & season. Add enough breadcrumbs to make the mixture more solid. Shape into patties and fry.

Grown-ups (and adventurous two year-olds) may like these with sweet chilli sauce.
