Inspire me, food ideas for vegetarian ds 10mths

I'm doing the same lunch and dinners as lost inspiration.
Any ideas to bulk out?
We usually do:
Porridge, toast and dippy eggs or scrambled eggs or yogurt and fruit with toast for breakfasts.
Lunch generally on go so snack crisps (bbay ones) fruit, cucber slices, hummus for dipping and cheese spread sw.
Dinners vary more, normally: various veggie tomatoes based pasta dishes with lentils, lentil stews with veg, chickpea stew, veggie lesagne, Dall and rice, veggie curry and rice, sweet potato and veg mash, roast veg sticks with dips (wasn't keen) ", creamy pesto pasta. He has had chips and pizza a few times when out or with dp older kids. He's also tried gnocchi and liked that.
Pudding is fromage frais, fruit pots, rice pudding or custards.
I generally do brown rice and wholewheat pasta as its what I like.

He literally has sw every day and seems bored of them but they are easy!

Cheese and veggie quiche or frittata, mushroom risotto, nut butters on bread, pancakes with savoury fillings eg ratatouille and cheese

I wouldn’t go for wholewheat pasta and brown rice, they aren’t recommended before 2 or even later, IIRC. They’re too dense and don’t leave enough room for other nutrients.

We did quesadillas - so basically tortilla or wraps filled with spinach, cheese, sweet corn etc and toasted. Popeyes pasta went down well - it’s an Annabel Karmel recipe. Omelette strips or frittata, home made falafel, tofu scrambles.

For breakfast we made overnight oat fruit porridge type things - soak oats overnight in milk and add a handful of frozen raspberries or blueberries.

I didn't know ref rice n pasta. Its what I like as I can't stand white rice.
But okay I can change
He like homemade crust less quieche, so good ideas!
I thought falafal might be too dry for him but with humus or pita strips he would like that. Thanks

Veg pizza. Could make out of English muffin. Even if just tomato sauce and sweetcorn on!
My dd (now 17m) absolutely loves veg stir fry and I give her a small.amount of sweet and sour sauce on the side which she dips the peppers and mushrooms in!
Veg fingers/ veg sausages with beans and wedges.
DC love a quick freezer meal of icelands greggs cheese &onion pasty.
Jacket potato/ mash with beans/ coleslaw/ ratitouille.
Quorn spag bol/ quorn chilli con carne.
Know its not the best as a meal but for a lunch cheesey nachos with.guacamole.
I used to spponfeed or get them to feed themselves a thick smoothie for breakfast or snack in a bowl

Can they have soup mix with the beans n lentils you soak overnight? That would make a hearty veg soup with bread to dip
