Fussy 13month old

I'm sure this topic has been posted time and time again. My DS (13months) who formerly ate everything has now become incredibly fussy (mainly with fruit & veg). He will eat banana by the bucket load and loves sweet potato, broccoli, baked beans & raisins but anything else with vibrant colour he just looks at and refuses. He throws this food on the floor in protest as well as crying. On the rare occasion he tastes the food he spits it out as if he isn't keen on the texture (he does this also with food he DOES like if he is not sure of the texture)I continually offer him blueberries, mango, kiwi, raspberries, strawberries, apple, pear, oranges as well as tomatoes carrot, sweet corn, peas, cucumber and all other veg etc but still this is refused. We also eat at the table with him when possible I.e when not at work to encourage him further. The surprising thing is it is documented in his nursery book that he has eaten 'ALL' snack fruit at nursery.
I guess I am asking for hints and tips to get him back on track to eating fruit and veg as he used to without much of a battle. More recently I remove any food from the floor and say 'this belongs on the plate not the floor' & throw it away without offering an alternative. I, however, suspect he may still be hungry.
He has a morning and bedtime cows milk bottle through a straw sippy cup, is offered 3 meals a day plus snacks and water and mostly refuses being spoon fed other than yoghurts (normally uses hands or pre-loaded fork/spoons). Any advice would be appreciated.

My DD went from eating anything and everything from 6-11 months to then being very picky for a 3ish months, she’s now come full circle and eats most things again.
I tried to be relaxed about it to be honest especially as it came at a time when she was getting her molars through; when she threw food on the floor at dinner I’d offer something I knew she’d eat like a banana and yoghurt or pasta as I wanted her to be full and I ignored the throwing food on the floor. Recently she’s stopped throwing food on the floor and just hands it back when she doesn’t want it and hands her plate back when she’s done.
