My dd, 9months, used to be quite good at finger food but now she will have a couple of little nibbles then just squishes the rest in her fingers until its just a pulp and a big mess!!! Over the last couple of days she has destroyed strawberries, bananas, toast, a peach, even rice cakes!!
Any ideas how i can encourage her to actually eat more of it?

My DD does this when she isn't hungry. Are you sure yours is? Honestly I think the only thing to do is just keep presenting her with a variety of foods (if you can bear the waste). Some of it will go in!

It's probably that she's just developed her pincer movement and needs practice and that she's not that hungry. I'd give her bigger bits of stuff, that way she can mush and eat.

My DD did this for a bit, now she does the mushing in her mouth (not that all of it stays in but it's the trying that counts)
