What to do with red lentils?

Just bought some red lentils for dd-Now what do I do with them. Any good, simple ideas?

I just make a veg stew (chop up some veg - whatevers in the fridge - and boil with veg stock or just water, and add some lentils for the last 20 mins - strain and mash up. Easy 1 pot cooking - my speciality!

Oh, she also likes it if I stir in some cheese before serving - hope her wierd food cravings last!

I use them in any recipe that usually has mince - we have Spag Bol with them, and Shepherd' Pie. HTH

red lentil sheperds pie a big hit with all three dds including 8 month old dd3

They make great soup with onions, carrots and lots of garlic, mildy spiced with curry powder and finished with lemon juice and coriander leaves.

Also can make a dhansak curry sauce with them. Yummy.

Red lentil and butternut squash soup
Done in say 20 mins to half an hour -
Fry an onion and garlic, till soft or until you have peeled and chopped a butternut squash!
Add the squash, some red lentils, stock if baby old enough for salt (basically no salt until over one year old, then very little after that!) or some water and herbs - say fresh thyme - and simmer till it is all tender, then puree - (remove thyme stalk before you puree if you have used it) - you get a loads of goodness, easy soup meal!
You can then cool the soup down by adding as much Greek live natural yoghurt as you want. If you have it sprinkle on some fresh coriander too!
Check baby old enough for lentils, dairy products - basically if no allergy probs should be OK at 6 months - ish but not before 6 months.
You could just boil some red lentils in water and stir till pureed if baby is between 4 - 6 months. Freeze in ice cube trays.
