Healthy biscuit texture foods

My dd enjoys organix banana biscuits. She's learning to bite and chew (just under 7 months).

Most foods with this texture are either sugary or salty for a baby. But I'd like to offer more "normal" food than baby biscuits or rusks iyswim.

Any ideas or recipes? Sweet or savoury?

Toast or breadsticks with mashed avocado, mashed banana, peanut butter, or cream cheese.

Plain cereal of a size that can be easily picked up (e.g. mini shredded wheats) with milk.

Sticks of cucumber, celery and raw peppers.

Chunks of soft fruits.

Aubergine, courgette, peppers, squash, carrots, sweet potato etc cut into stick shapes and roasted in olive oil.

Strips of steak or chicken.

Babies of this age can have most things really, except salt, sugar, honey and whole nuts, and possibly not whole grapes or raw carrot or apple, which may break off in hard chunks and cause a choking hazard.

Most marketed baby snacks are processed junk, and are often high in sugar, though it may be in the form of 'concentrated grape juice' etc

Bake porridge oats soaked in milk until biscuit texture? Add some cinnamon maybe.

Cheese biscuits? You'd probably need to make your own though.
Rice cakes - either big unsalted ones or baby ones - there are tomato flavour as well as the fruit ones.

How about the blw porridge fingers? There are variations with fruit purees added. They are made in the microwave.
