Quick recipes for a 1yo

She'll eat anything we put in front of her but I admit dh and I don't have the BEST diet so we've probably been a bit too dependant on pre-made baby foods. We are determined to give her a balanced diet though and have order a couple of recipe books for ideas.

Typical day is toast or wheetabix for breakfast,soup or pasta for lunch and an ellas kitchen pot or bits of whatever we're having (pasta,rice etc) for dinner. She has a bottle in the morning and before bed and will snack on fruit if she needs it. Veggies,I know,are severely lacking outside the prepared meals.

While we're waiting for them to arrive can anyone provide some inspiration?

Hello!

My DD is 25 months, here are a few quick meals I cook -

  • homemade soup (you can buy pre diced soup veggie packs now, all you have to do is add water and cook. Asda do some great ones in the produce section for about £1.) I love giving my DD soup as it's so packed with vegetables!
  • pasta with cream cheese and peas/spinach/leeks/sweetcorn (whatever veg is lurking in fridge!) a and some Parmesan
  • gnocchi, takes two mins to cook, with the above sauce
  • salmon, pop in microwave for 3-4 mins and stir into a dollop creme fraiche, add cooked peas and a grating of lemon. Stir into pasta/gnocchi
  • jacket potatoes with beans/cheese/tuna&sweetcorn etc.... Can use normal potatoes or sweet potatoes.
  • eggs, poached/boiled/scrambled with toast, cheese and ham
  • pitta bread pizzas

I don't always cook from fresh and always keep a few frozen sauces/meals in the freezer that I can take out and have a meal ready for DD in minutes! (with minimal effort!)Smile
