Can anyone recommend the above please? The one I think I may use is the banana cake recipe from the 'River Cottage' book, but I'd love to hear any others!

TIA

Is it only Butter or eggs too?

I make a basic sponge for my mum, the weight of 3 eggs in their shells of soya marg, sugar and flour.

Cream the marg and sugar together add eggs a then flower, dash of vanilla essence

Bake in two sponge tins for 20 mins at 170C

Yes, if it's only butter you need to find a substitute for then that's easy. I prefer to use Stork (in foil, not in a tub - the one in a tub isn't dairy-free) to the sort of margarine that you would put on your toast - it's higher in fat so it behaves more like butter in cooking.
